Recipe: 712 dinner club shortcakes

So as you may recall… a recent trip to the Pizzeria 712 dinner club left me longing for the amazing shortcake biscuits served for dessert.

Well one of the BRILLANT chefs was kind enough to share the recipe!

Ingredients

  • 1/2# butter unsalted cut into cubes
  • 1# flour
  • 1 oz baking powder
  • 1/3 c sugar
  • pinch of salt
  • 1-1.5 cups cream

Make sure all the ingredients are nice and cold. Place flour, baking powder, sugar, and salt into the bowl of your mixer with the paddle attachement.

Mix in the butter, one cube at a time. Working quickly. Once the butter is incorporated and the batch looks a bit like gravel. Add the cream. Start by adding about 1 cup, again, mixing very quickly. Then add just enough until the dough begins to come together.

Spoon the entire thing into a 9×13 baking pan lined with parchment. {this was the part I was not sure would actually work.}

Bake at 425 until they are a nice golden color.  

Serve warm. GREAT with minted strawberries and sweetened cream. The chef also suggested making them less sweet and serving with southern style fried chicken. OH YEAH.

In the recipe, it says 1/2 # butter and 1 # flour- I’m assuming that means cup, right? If not please let me know.
