Butoni – Perfect Pairs for Simple Entertaining

Busy Busy Busy.. that about sums up my day. In fact, that sums up my life. So I was thrilled when part of the Foodbuzz Tastemaker program I received the opportunity to sample some Butoni frozen meals. I was pleasantly surprised. I thought for sure that I would get some everyday frozen meal that is fine in pinch but sub-standard for serving to friends. Man, I was so wrong. The meals were amazing. So I invited the girls over for some summer crafting.  Just pair your favorite Butoni  variety with a simple salad and you have a great meal in no time. In the busy world we live in, we just have to make more time to stop and smell the roses and to spend time with our friends and family. And with high quality frozen products like these, finding the time is easy.


One of my favorite flavors is the Grilled Chicken and Spinach Cannelloni. Pair this with my simple fresh corn salad for a simple summer dinner.
Recipe: Fresh Corn Salad
Ingredients:
• 4 cups corn kernels cut from sweet summer corn cob
• 1/3 c finely chopped sweet onion
• 1 c sweet grape tomato (each cut if half if too big)
• Sweet Lime Vinaigrette (to taste)
Toss all the ingredients in a medium bowl. Salt lightly and add fresh cracked pepper liberally. Let chill for 15. Serve.

Sweet Lime Vinaigrette

  • 1/4 cup lime juice
  • 1/4 cup fresh orange juice
  • 1 1/2 teaspoons honey
  • 1/4 cup orange zest
  • 1/8 cup sugar
  • Salt
  • Pinch white pepper
  • 1 cup plus 2 tablespoons light extra-virgin olive oil
  • Blend all ingredients together.

    What really strikes me about these prepared meals, is that they are good enough for guests. Add a fresh salad, and the stress of entertaining is gone. Not being in the kitchen while my guests are mingling allowed us to enjoy each other more.

    We even had time to create these fun summer keepsakes as little souvenirs.Something I could never do with my guests before. Usually I would be busy in the kitchen (happily of course) but unable to hang out. This time, since dinner was on the table in moments with no mess… we could actually sit and create together. I truly hope that you we can all take a moment to spend with friends and family, and enjoy a simple delicious meal

    Other fantastic pairings…
    The Shrimp and Lobster Ravioli in Garlic Butter sauce is decadent and rich. It goes well with the peppery bite of fresh Arugula. A drizzle of good balsamic and a sprinkling of salt and pepper is all it takes for a perfect pair salad.

    The Southern Italian Style Lasagna was a family favorite. The prefect blend of meat and cheese all baked to perfection. Try it cold with a classic Caesar salad for a great picnic in the park. You can even slap it between a couple slices of bread for a yummy sandwich.
